Baltimore-based Old Line Spirits is adding a PX Sherry cask finish to its rapidly growing Double Oak American Single Malt Series. Finished in freshly emptied Pedro Ximenez Sherry casks and bottled at 100-proof, this latest edition will be available beginning Feb. 26 at the distillery and through its e-commerce platform. In the American Single Malt Whiskey Double Oak Series, Old Line previously released a whiskey finished in Oloroso Sherry barrels. Now, the new PX Sherry presents tasting notes of vanilla sponge, citrus, dark chocolate, raisin, plum and cherry. Each bottle is at least four years old, including six months in finishing casks.
“The world of sherry is broad and varies,” said co-founder Mark McLaughlin. “This Old Line release explores the sweetest of the seven sherries: Pedro Ximenez. As with all of Old Line’s finishes, this one is the result of a deliberate and delicate balance of putting our ASM into a freshly emptied barrel finishing barrel when the whiskey is at the proper level of maturity where, so it could stand on its own but is also still able to embrace the character imparted by the finishing barrel. And then, of course, we have to remove it from the finishing barrel at the right time! I think we nailed it on this one.”
The Sherry cask finish is the ninth addition to the award-winning Double Oak American Single Malt Whiskey series. McLaughlin suggests enjoying it neat, on the rocks, or in a Manhattan or Old Fashioned. The release will retail for $65 and will be available at the distillery and select retailers on Feb. 24.
