Copperworks Releases Whiskey in Support of Seattle Aquarium

Copperworks Distilling Co. has released Copperworks American Single Malt Whiskey Single Cask No. 322,created to celebrate and support the Seattle Aquarium’s grand opening of its new Ocean Pavilion. The distillery will donate $10 for each bottle sold to the aquarium

“This is a unique opportunity to enjoy a remarkable whiskey while contributing to a beloved Seattle institution,” said Copperworks Distilling Co. co-owner and president Jason Parker. “We distilled Single Cask No. 322 from Salmon-Safe certified* Genie barley, grown on John’s Ranch in Athena, Oregon, and harvested in 2018. We then matured the whiskey in a new American oak cask for five years and six months before bottling it for this special release in support of the Seattle Aquarium.”

Tasting Notes

On the nose, this whiskey offers a vibrant blend of tropical fruits, orange oil, and a touch of menthol, all balanced by herbaceous thyme, rich vanilla bean, and the comforting aroma of freshly baked bread. The palate unfolds with layers of cocoa nibs, baked apple, and spiced pear, seamlessly transitioning to a sweet-salty finish reminiscent of scalloped potatoes. The mouthfeel is warm and honeyed, with the added complexity of yeast rolls and a refreshing hint of peppermint. The long finish features notes of clove, allspice, and a subtle brine. This whiskey pairs beautifully with a rare steak, a refined dessert cheese plate, or enjoyed as a contemplative sipper.

Salmon-Safe is at the forefront of a movement to adopt farming practices and developments that safeguard water quality, preserve watershed health, and restore habitats for fish and wildlife. These practices include planting trees along streams for shade, using cover crops to prevent runoff, and employing natural methods to manage weeds and pests. The malted barley used in this release was grown entirely in compliance with Salmon-Safe certified practices. A few years ago, we were the first distillery to release a whiskey from barley with this certification, and we’re proud to uphold that tradition with Single Cask No. 322—an especially fitting choice for a release dedicated to supporting marine life conservation.
