Apologue Liqueurs Expands Lineup with New Fall-Ready Carrot Expression

Apologue, the Chicago liqueur brand known for transforming unexpected ingredients into all-natural liqueurs, announces the release of its newest expression: Apologue Carrot. Officially available for both bars/restaurants and at-home consumers, Apologue Carrot joins the brand’s lineup of inventive liqueurs, which also includes Aronia Berry, Celery Root, Persimmon, Saffron, and Paw Paw.

Crafted in small batches with locally grown Nichols Farm carrots, Apologue Carrot liqueur showcases earthy undertones complemented by warm baking spices, bright citrus peel, and a long and fascinating finish. Formulated using carrot “three ways” – chopped, dried, and juiced – Apologue Carrot highlights both the depth and brightness of the root, bringing a familiar yet underutilized ingredient into cocktail culture.

“Carrots are uniquely interesting in that they’re incredibly familiar, yet when presented in an unexpected context, like ice cream, cocktails, or now a liqueur, they can feel playful, bold, even adventurous,” shares Robby Haynes, Apologue co-founder. “Their versatility excites me; earthy but bright, refreshing yet savory, equally at home in highballs, spritzes and sippers.”

Haynes spent years slowly developing the Carrot liqueur concept, talking to bartenders, gauging interest and exploring complimentary fruits, roots and barks for incorporation – ultimately landing on a dynamic blend of ginger, cinnamon, lemon, mint, cinchona and citrus. The resulting liqueur bridges both culinary and cocktail worlds, offering bartenders a versatile tool that can pair seamlessly with nearly any base spirit, from whiskey and rum to tequila, mezcal, or even shochu.
