Upstate Brandy Maple is handcrafted under the expert guidance of Sauvage Distillery. The process at the distillery begins with the fermentation of juice from locally grown apples, which is then distilled to 160 proof to retain its rich character. The resulting distillate is then aged for a minimum of two years in oak barrels (ex-bourbon and American oak), imparting rich flavors, depth, and complexity. The final touch to the brandy is the delicate addition of pure maple syrup from Schoharie County. The resulting expression, Upstate Brandy Maple, is a smooth expression with a distinctly local profile that bridges the crispness of orchard fruit with the warmth of maple.
