Cathead Distillery Debuts Sorghum Grain “Straight Bourbon Whiskey”

Cathead Distillery, Mississippi’s oldest legal distillery, announced the release of Estate Collection #3: a 7-year Straight Bourbon Whiskey. Crafted exclusively from Mississippi-grown grains, this bourbon embodies the distillery’s dedication to producing quality spirits that represent a strong sense of place.

Crafted from a unique mash bill of 65% corn, 28% wheat, and 7% sorghum grain, all grown in Mississippi, this expression is pot distilled and matured in a blend of American Oak barrels (Char levels 2, 3, and 4). Bottled at cask strength of 111.5 proof, the bourbon has spent seven years aging in Mississippi’s heat and humidity, developing into an earthy and richly nuanced whiskey.

On the nose, it opens with a sweet and earthy bouquet, carrying floral honey and vanilla layered with nostalgic hints of bubble gum and gentle baking spice. The palate is soft, sweet, and nutty, delivering rich notes of molasses and caramel, followed by a warm undertone of almond. Its finish is expressive, with a subtle graininess and flashes of raisin, licorice, and a touch of cinnamon that linger with gentle spice.

“Every grain used was cultivated in Mississippi, and the entire process, from field to bottle, happened right here,” said Richard Patrick, Co-Founder of Cathead Distillery. “The inclusion of sorghum, an ancient grain that can withstand the harsh environments of Mississippi, adds a familiar layer of complexity that speaks to our roots and region.
