Seattle-based OOLA Distillery is excited to announce the tasting room hours at its Capitol Hill location, starting at noon Thursday-Saturday. The neighborhood welcomed the distillery’s return to the area in August with love for its restaurant and cocktail bar. The tasting room will further showcase OOLA’s spirits with tasting flights, a limited cocktail menu, and small bites. The full restaurant and bar will continue to run service starting at 5 p.m. Tuesday-Saturday.
“People over projects,” co-owner KT Niehoff says about waiting to open the tasting room. “We want to grow our business intentionally and within our means.” She explains that the additional daytime hours come only after ensuring OOLA Capitol Hill is fully staffed and everyone feels supported. Niehoff reflects: “It’s both a smart decision and a human one.”
OOLA Capitol Hill’s new tasting room concept evokes memories of the original OOLA Distillery location that used to be down the block. “We still can’t believe that we were able to come back here,” co-owner and master distiller Kirby Kallas-Lewis remarks. “A big thank you to the neighborhood for supporting our homecoming.”
In honor of the new and homage to the old, OOLA is celebrating the grand opening of its tasting room by bringing back the beloved half bottle–AKA the ‘375,’ for it contains 375 milliliters of spirit. The ‘375’ half bottle is on sale for $14 plus tax to commemorate OOLA’s 14th anniversary in January and its return to the very corner of Cap Hill where it all began.
